St. Regis Monarch Beach, Dana Point, CA (1999 - 2001)
The Owner’s aesthetics shifted over the course of the project from traditional to contemporary. I was brought in mid-course for certain areas of the resort including the Spa Gaucin, Crust Bakery, Michael Mina signature restaurant, Lobby Lounge and bar, and the Wine Cellar private function room.
This AAA Five-diamond resort has won countless awards and has been widely published. The Gaucin spa was also the first time I had worked with world-renown spa designer Sylvia Sepielli of SPAdesign. This also was the first time I had worked with a world-renown chef, Mr. Michael Mina.
